Liquid terroir in a glass. The StephanO winery in Deutsch Schützen is a real gem – one ‘built on green meadows’, as the unorthodox career changer and cellar master Stephan Oberpfalzer likes to say. For the Salzburg native, Blaufränkisch wines from the Saybritz, Fasching and Ratschen vineyards take centre stage. The passionate neo-vintner focusses on low yields and high quality from vines that are as old as possible. It is particularly important to him that his wines express their classic origin characteristics. And to achieve this, the untraditional newcomer likes to use extravagant methods, such as vinification in concrete eggs, to give even more expression to the inherent minerality of his wines. The exciting result: liquid terroir.
